Kaoru: Madeleines



When my neighbor Annie invited me over for lunch today, I decided I'd bring over somes madeleines for dessert. And with it snowing outside, it was just the thing to do this morning. They turned out pretty well, although I prefer a slightly more dense, poundcake-like consistency. Perhaps I will give them another go, or try another recipe.

Below is the small plate of cookies I gave Annie.

These madeleines look beautiful! You perfectly filled the tins to create those perfect puffed hills of yumminess. I'm making them this weekend. I'm really into almond these days. maybe I can add some almond extract instead of lemon. We'll see what I come up with.

Did you just use regular all-purpose flour?

Aren't madeleines supposed to be fluffy. If they are dense , I think it means the batter has been overmixed. I have a feeling kaoru made a perfect madeleine. I might do 1/2 t. vanilla and 1/2 t almond extract and omit the lemon zest. I have seen some with almond flour which might make a denser madeleine.
